Recipe of potato gnocchi- HOTEL LORETTA CERVIA & DÉPENDANCE “CASA ZOFFOLI”

Siete pronti per fare un bel piatto di gnocchi di patate? Ecco la nostra ricetta 🙂

WHAT DO YOU NEED:

  • chopping board;
  • knife;
  • masher;

– paper tray (floured);

–  pot.

INGREDIENTS (for about 4 people):

 

  • 500 gr. of potatoes;
  • 150 gr. made with flour;
  • 1 egg;
  • salt (enough)

PROCEDURE:

Wash the potatoes and put them (with the skin still on) in a pot with water until the potatoes are covered. Add salt.

Let the potatoes cook for at least 30 minutes with boiling water (you can check with a fork if they are tender enough while cooking them). Once they are ready, peel them while they are still warm and mash them with the potato masher. Mix the potatoes (they have to be warm) with the wheat, previously prepared in a shape of a fountain. Add the egg, a bit of salt and mix until you will obtain a homogeneous compound.

Shape it like a loaf and cut it in cubes of one-inch size.

Let the compound rest on a cutting board or on a baking paper with wheat on it.

Cook the gnocchi in abundant boiling salty water and as soon as they float, drain them.

Use your creativity to season your potato gnocchi. They are great with meat ragu, with tomato sauce and basil and with gorgonzola cheese.
